Yes it was a chuck roast with plenty of fat marbling.
After posting my comment I spent some time reviewing what I did with the roast and I think I may have seared it too much on the stove before putting it in the oven. I remember searing it on both sides exactly how long the recipe says to, but it was more “cooked-looking” than the roast in the pics on the webpage. Could that have been what made it too tough?

I used the sweetness from red pepper and the acidity of rice vinegar to offset the saltiness, but still wound up making a stir-fry so I had enough to eat while using less of the beef. When using as much as I can stand given the saltiness, the batch amounted to approximately 24 servings. It’s good enough that I’ll likely try it again, but I’d do 1/4 cup soy sauce, and 3/4 cups water for the sauce.

I doubled the broth and mushrooms but left the remaining ingredients as is. I added some finely chopped scallions, a bit of ginger and garlic and finished with a squeeze of fresh lime juice. Topping with the chile garlic sauce adds a nice touch as well. I will definitely make again and according to my nutrition calculator, this only came in at 350 calories so I’m happy with that!

But today I got some King Oyster Mushrooms… Ripped into strips, marinated and baked in the oven for 20min. Served in arabian flatbreads with tahini, greek yogurt, rocket and sliced radishes and OMG delicious!!!
