After just making this for dinner, the one edit I would make is to saute the zucchini for a minute alone before adding the tomatoes. I added them both together as written and the tomatoes leaked so much juice before the zucchinis even tasted the pan. I then made the mistake of letting them cook longer in the hopes of the tomato juice cooking off, but I just ended up with a very runny sauce instead.
The flavor’s great though! I’m saving this recipe to try again, just might try to give the zucchinis more pan-time than the tomatoes next time.
