If you drain and rinse the beans gently in cold water you will get rid of the gas.

I upped the spice level with a 1/4 tsp more cayenne and a tsp of ancho chili powder. Plus I cut up 3/4 a yellow bell pepper and cooked with the onions/garlic. It came together quickly and I let it simmer for an hour. Perfect for this January weather.
