But I didn’t have any on hand and needed something quick. I actually prefer this recipe! I find chuck roast to taste too beefy, but ground beef was just right. I accidentally used 1 can of diced tomatoes (14 oz), but found it to be just the right amount. Next time I’ll double potatoes because I love them in soups. Thank you for your recipe! Never thought about using ground beef but it will be my go-to for vegetables/beef soups.
