It could be a few different things! If you substituted a lower fat milk for the whole milk, those tend to separate easier. It could also be that maybe your oven is actually a bit hotter than the temp says. Even something as simple has the ph in your milk being a little lower or higher can throw things off.

I would love to increase the protein and make it a breakfast meal prep option.
